Paleo Mayo

Spending 15 minutes on a batch of homemade mayonnaise can offer a great amount of cost savings and make enough to last a least one week.  
​~Makes 4-6 servings
Ingredients:​​
  • 1 egg, room temperature
  • 2 TBSP Lemon Juice
  • 1/2 TSP Salt
  • 1/2 TSP Dry Mustard
  • 1 Cup Olive Oil (substitute Avocado, Almond or Walnut Oil)
Instructions:
  1. Put egg, lemon juice, salt and mustard in a blender.
  2. Blend ingredients.
  3. While blending, very slowly pour in the olive oil.  Blend until it reaches desired consistency.
​Store in the refrigerator for up to 1 week
